My grandfather would carry fresh chillies and small bags of salt in his pocket wherever he went. That’s how serious flavour was. That tradition didn’t fade — it passed down. From him, to my mum. From my mum, to me.

At home, Mum would make her chilli salt fresh. Garlic and onion finely chopped. Chillies crushed by hand in a pestle. A generous amount of salt added to bring it all together. Simple ingredients — but powerful when combined.
